Use of Ready-to-use Cultures in Dairy Industry: A Perspective

Abstract

"Ready-to-use cultures (RUC) are concentrated microbial biomass which are to be directly added to milk without prior pre-activation at a dairy plant. RUC technology has brought a paradigm shift in the dairy industry especially in production of fermented dairy products. Development of indigenous RUC technology will not only facilitate overall use of RUC but also help in bringing forth traditional dairy products and making them available to one and all."
